We removed the possibility to rename the product item number in 10.0.0 as it lead to data corruption cases: https://docs.microsoft.com/en-us/dynamics365/unified-operations/dev-itpro/migration-upgrade/deprecated-features#renaming-released-products
We would consider enabling it again with some restrictions for specific cases. If you vote the idea, we would appreciate if you can add in the comments what is the scenario you are trying to enable (what is the reason why you need to update the item number) and if there are any workarounds for your case. It will help us understand it better.

Add Product filter codes to Commerce product hierarchy
Commerce product hierarchy has been build to easily set default product information. Standard D365 already provides possibility to set unit of measure, tax groups, item groups and a lot of other options. Would be nice to have Product filter codes and other fields from Warehouse FastTab.

Enable empty values on fields for Attribute types (fixed list).
Customer has a business need to be able to add a field with an empty value on Attribute types with fixed list.
They are aware that they can put values - "N/A" "." "," or similar, but what the real need is, is the availability for customers to leave an empty value on those fields.
