You are restricted to Appointment and Service Actvities that can be entered into the Outlook Calendar. As Appointment does not allow multiple role-based forms, it is not possible to create different types of appointments with different fields (without JavaScript field showing/hiding).
By allowing custom activities to be scheduled, it will be possible to create multiple types of records that can appear in the calendar.
