You need to create separate API pages for each table, which is not included in the standard Business Central API. Also, if you need additional fields that are not included in the standard API, you need to create a copy of the existing API page and add the additional fields.

There used to be a report in NAV that users could run to see all the fields on all the tables. We need page that the User could share in Excel to view all the fields on all the tables.

This really needs to be on the road map. If you are encouraging people to use the power platform with BC, it makes it incredibly hard to build solutions without engaging a developer to create a copy of the api for the fields you need. To me it defeats the purpose of low code no code if I have to engage a developer.
