The requirement to override pricing is common for organizations that do custom products or services. My company has a fixed list of products and services, but we have to produce estimates taking into account things like product/service options (size, configuration), raw material price fluctuations (eg: sourcing steel close to where the product will be manufactured), client location (for shipping, added taxes, added industry requirements), etc. Also, my company commonly builds to a client's target price. I suppose companies like mine are in the minority, but currently picking products represents our biggest challenge in terms of user experience. An option to override the price in the grid would go a long way for us.
