The problem is that in the Unified Interface, the Primary Field for an entity is always displayed as the first field in Global Search regardless of where it is on the Quick Find view, and then it will show the first two columns from the Quick Find view as field number 2 & 3 in global search.
It should behave the same way in the UCI as it did in the classic interface. We cannot change the primary field of an entity and to some clients the primary field is useless information, yet it will always be the first field displayed in global search.

I noted the same (our custom order was okay in the legacy interface but not in the UCI). I just went to edit the order a little, saved, published, and then draw back, saved, and published - and then the changes became visible on the UCI as well. Have you tried this yourself?
