D365 Customer Service Hub includes for a while new Email Templates Editor, but with indication Preview. Default behavior when template created presently that user can only use new editor despite being in preview, which is strange on it selves.
Some disadvantaging when creating a template with new editor:
1) Font size of template don't correspond with actual font size applied when sending an email (10 old editor<>10 new editor)
2) Any text included in new editor is part of section, so is in a frame. With the old editor it was possible to have just text. Disadvantage of mandatory sections is that when combining/using multiple email templates while composing a mail message different textual parts appear not well aligned. The users get frustrated of behavior that highly depends on where they positioned the cursor during insert of an additional email template.
So far old editor used (for New>Start with existing template). Would prefer enhanced new modern editor no more in preview.

Currently it is possible to use either the enhanced email template editor or the old email template editor. - Documentation.
We are immediately not investing in email templates in the short term; however, we are tracking these requests and if we get more feedback and votes, we may consider it in the future.
