Using e-mail templates for e-mail signatures (typical scenario) requires several annoying clicks besides the risk of changing e-mail subject.
I would stronlgy suggest each user / queue have a template as default signature and include it automatically in any email being replied or at least have the option mark an e-mail template as e-mail signature and have a button to inlcude it with only 1 click.
