I'd like to stop tracking of e-mail records.

If I track e-mail items once from Outlook, I can no longer stop tracking after that.

The only way to stop tracking e-mails is to delete all tracked e-mail records which are related to the tracking e-mail record.

 (Changing the subject does not stop tracking.)

I want to be able to stop tracking e-mails easily without deleting e-mail records from Dynamics 365.
