We do not provide deletion permissions to our users for the activities. And Dynamics Security role only provides the permission at activity level, not at individual activity type.

What happens is when they untrack an email or an appointment, the untrack action happens but the deletion of the activity in Dynamics is not possible.

We would like to use Power Automate to detect the untrack action to trigger a flow that will delete the action. But currently this is not registered in any entity that allow to trigger the action.

Please allow the detection of untrack action in some way in CDS.

I agree. I have to manually delete email activities at the request of my users.
