There should be a possibility to delete unwanted employment records from a workers employment history. This functionality exists in Dynamics 365 Human resources and would make a lot of sense to also implement in Dynamics 365 Finance.

With the current product version it is possible that a user can accidentally create an employment for a worker with incorrect information. However as there is no possibility to delete the employment so in order to avoid the employment from affecting possible reporting or integrations the only possibility is to adjust the data so that it is essentially deleted.

An example scenario would be that an employment is created for a worker in advance and then for some reason the employment will become invalid - The worker could have left the company etc. In scenario like this it would make sense to just delete the invalid employment instead of trying to modify data to hide the employment.
