unfortunately, it is not possible to attach activities directly to an active quote from the record view. this should be made possible as it is often necessary.

In many views (quotes included) the easiest way to add an activity is to select a record then click on the "Add" Ribbon tab and choose the relevant item from there (likewise for Notes or Attachments). You could also customise the Ribbon to make some buttons more prominent if you use a particular activity type a lot, such as Task or Phone Call
