When you want to create an activity through the "+" in the social pane activities tab, it shows: e-mail, appointment and any custom activities. These option cannot be edited.

It would be clear if you can define the activities you want to be created through the creation overflow. It would be a bonus if this is configurable per social pane in a form or entity.
