We have found with CRM 2011 if the user who is set up as the from email on a workflow and in their Outlook settings they have 'Use Cached Exchange Mode' checked, then the workflow emails do not get sent. If you uncheck the 'Use Cached Exchange Mode' then the emails go through fine. This seems to be a bug.
