This is similiar but not exactly the same as another suggestion I saw. In CRM 4, you had the preview pane that you could open on an Activity and it would show you information. We had configured that to show the Description field. In CRM 2011, there isn't any functionality like this, so we added the Description field as one of the columns. People can read the first sentence or so, and they can use the tooltip to read more. With Email Activities all they see is HTML.
Ideally, this column and tooltip would show as plain text for any Description field that has HTML in it.
As a side note, we have had issues where we had a series of emails being sent back and forth between our client and our employees. Because the description field for the email activity was so much, it caused CRM to lock up and time out. When we went into those activities and changed the data to plaintext, it took hardly any time to come up.
