US F&O instances sometimes have customers who resides in regions (Europe) where they use the metric system. For these customers there is sometimes a requirement to see shipping docs such as BOLs, Packing slips and others in a Unit of Measure using Metric system. (But requirement could obviously be reversed, European or Asian instances having customers in US using Emperial system)

The ask would be on the customer form (or based on UOM customer group), to be able to select the types of documents which would need a UOM different from standard, select UOM for each doc type, pack slip, BOL, Invoice etc, and associate that using our standard unit conversation and/or specific unit conversion set for the item.
