Planned substitutions: Acceptable substitutes could be setup by item / variants and customers.
Substitutions would be evaluated during the wave execution and work is created for the
substituted item.
On the fly substitutions: Acceptable on the fly substitutes could be setup by item / variants and customers.
Substitute function would be added to the warehouse app.
In both cases system would then update sales orders with a substitute line (may be a new line type).
Reasons for substitutes:
Inventory may not be 100% accurate
Products may come in alternate packaging but core product is the same.
Some customers may be willing to accept substitute instead of planning for purchase or production.

In the context of a food wholesaler picking ~10k order lines across ~1k orders in a night, we'd definitely require this - and it would be useful both (a) at point of pick for the operative to be able to substitute, (b) at wave processing in the event that there is no available stock to pick

I guess the substitution may already be required at reservation, because you may not even get to the wave if there is no onhand that can be reserved.
