I'd like to set first working day to Monday in Time Entries & Approvals.
or set display only working day from Monday to Friday like OUTLOOK.

This is possible today through configuration, setup your start of week by changing the regional settings within settings.

 

1. Sign in to Dynamics 365 as a System Administrator

2. Navigate to Settings -> Administration

3. Select System Setting

4. Formats

5. Press Customize (to the right of the Current Format)

6. Select Date

7. Change First Day of the Week
