Often we sign our emails as coming directly from the customers' contact person at our company (Owning Team's Administrator). It would be helpful to be able to add a personalised image that pulls in the user's profile image. Currently, the profile images are not available to the web, so this does not work.

This is already possible. If the link to profile image is available in a column of Contact or a related table, it can be easily inserted (see Personalize content using predefined dynamic text - Dynamics 365 Customer Insights | Microsoft Learn - the page described dynamic text but the same concept is available for image URL insertion).
