Currently there is no out of the box capability to allow hiding option values from an option set. So to hide values a script has to be added. Would be nice if you can select an option value and indicate to hide that value (e.g. because value is not used anymore). Hiding doesn't mean deleting as deleting an option value is only a solution when the option has not been used already in entity records.
