Assets provide the functionality to maintain “Asset Properties (msdyn_property/msdyn_propertylog”), which allows the users to enter different Data Types (Number, String, Boolean, Data/time) for the properties.
What would be required on top would be the functionality to have a predefined list of values (OptionSet/Choice) as well.

Since this functionality already exists in D365 CE (see “Property Option Set Item” on product entity), this approach could be reused also for the asset area eventually.
