Just like Released item can be put on hold to stop it from being used in transactions when the Item becomes obsolete, similarly, product variant must also have the option to put on hold.
Example:
A company purchases laptop in different sizes. like 15", 17" etc. Later company decides 17" cannot be purchased any more and the variant must not appear for User to select when item is used in transaction.
This feature is good to have and customers ask for it.

The ability to put a variant on-hold has been available since release 1611 of Microsoft Dynamics 365 Finance and Operations.
To stop a product variant use the following steps:
1. Go to product information management > Products > Release product and select the product master desired
2. Click on Default order settings, under the tab Plan
3. Click New
4. Select the Rank desired for this line. Note that the higher the rank, the more important the rule is, meaning it will have a higher priority, To ensure that it is used over other ranks (the product is stopped), include a higher rank than the rest of the rules.
5. Select the site if the product needs to be stopped for only a specific site
6. Select the product dimensions that need to be stopped
7. For Purchase order, Inventory and/or Sales order tabs, select Override default settings and click on the option Stopped.
