It would be useful to give an item category the ability to have a default dimension. So this dimension could be given automatically to all articles that are assigned to a category.

I agree with this suggestion.
It is normal to have dimension ITEM CATEGORY.
So, this way we have to input twice: in Item Category and in Default Dimension, which is not intuitive.
