It is not possible to change the label for an existing choice value for the OOB Priority column in the Task table/entity. Nor is it possible to add a new choice value to that OOB Priority column in Task.

The same is true for all tables/entities which are associated with Activity. It is possible to add a New Column to the Task table with the desired priority values. However, since new columns cannot be added to the Activity table, the various Activity views will only reflect the OOB Priority column and not any new custom column on the Task table.

Similarly, it is also not possible to add the emojis/colors to the Tasks based upon Priority. The desire is to have Task views similar to the Enhanced Case View.

It would be helpful to have more flexibility in modifications to these tables--such as Task--as well as the related Activity Views.
