There should be a possibility to see the inventory of an item in a store from an other legal entity in POS. Also in e-commerce: a customer has legal entities in different countries but will deliver from the central stock. This is a big requirement in Europe!

This is indeed more en more applicable. There are multiple cross legal entity blind spots in the POS, but this one is in the top 3 to cover..

This is a requirement we often hear from our (potential) (European) customers; this blind spot in the application is more than once used (by our competitors and potential customers) to disprove a true omni-channel strategy capability.

The cross legal entity inventory look-up for POS has been released in 10.0.48 and the public doc can be accessed here Enable cross-company inventory lookup for POS (preview) - Commerce | Dynamics 365 | Microsoft Learn. We are also working on to enable cross-LE support for ecommerce. Stay tuned on further releases.
