If a lookup field is "filtered-by-related" by default AND users are allowed to remove the filter, in the web interface, users are able to look up more records on a look-up field, uncheck "filter-by-related" box, and look up all records. Users are not able to do this in Unified Interface. The "filter-by-related" must be unchecked by default in order to allow users to look up all records in the Unified Interface. I opened a Microsoft Support ticket for this: 119081224004784. Engineers acknowledged this is a feature gap.

This has become an issue for us too. We have a custom entity used to identify contact "roles". We also have child accounts that have contacts at the parent account performing these roles so now we can't search for them when using this lookup in the new UI. What is the work around? We don't want to have duplicate information at the parent and child account levels!

This feature is definitely required again. We had to switch off prefiltering because for a significant number of business cases the Contact person of a Case is not the enduser of the product, but from a 3rd party company. Means Contact of the Case is not from the Customer.

We just found out this behaviour - and it's a complete show stopper for us as well.
We need to stay on classic interface - even we are facing more and more problems with Microsoft Support because we don't switch to UI.
Please fix this asap!
