For the Close Date field in particular, having the date and time on the field creates an issue for closing quarters or our fiscal year as we are a global company. The date and time will be the date and time of the server, but someone who is in a time zone in Europe who closes something today may have it show up as closing yesterday if the server is in the US Eastern time zone, depending on what time of day they close it.
This happens in CRM Online.
