It would be excellent to have the possibility of creating global variables which can be accessed from any topic. For example, if I ask the customer for the email, know in all the topics which is the client's email without having to ask again

By "Global" do you mean variables scoped to a conversation or variables that aren't conversation specific? Victor's example is one where I'd need that variable bases on the conversation/session. The last time used someone used the bot or how many sessions are happening concurrently would be conversation independent.
